Here are some of my crowd pleasing recipes that you can make at home. Yummy easy to prepare, you can elevate any dinner to gourmet status with these flavors

Shrimp Scampi Bread

  • 1 fresh French baguette
  • 12 peeled and deveined medium sized prawns
  • 1/2 lb. butter softened
  • 2 tbs. Parmesan cheese
  • 1/2 tbs. Orange Juice
  • A pinch salt
  • 1 1/2-2 tbs. chopped garlic
  • 1 Scallion finely chopped
  • 1/2 tbs. white wine
  • ...enough Parmesan to sprinkle on top of butter

Directions:

This is a one pan dish...
  1. With a sharp bread knife remove the top 1/8 of the baguette.
  2. Using your finger and thumb, remove the center of the bread forming a trough the length of the baguette. Do not remove too much bread.
  3. Place the prawns into the bread tail ends together. This makes sure the shrimp fills the bread evenly.
  4. Generously spread the compound butter covering the bread and prawns completely.
  5. Sprinkle the remaining Parmesan cheese on top of the butter.
  6. Bake on a sheet pan at 350 degrees for approximately 20-25 mins. When the Parmesan cheese is lightly golden brown, remove and cool.
  7. Slice with serrated knife 1 1/2 inch pieces.

Steamed Salmon

  • 2 - 5 to 6 oz. Salmon filets, skin off and deboned
  • 2-3 cups sliced mushrooms
  • 1/2 - 1 Tbs chopped garlic
  • 2 Tbs olive oil
  • 1/2 red onion sliced
  • 4-5 cups raw spinach
  • 1/2 cup white wine
  • Salt & Pepper to taste

Directions:

This is a one pan dish...
  1. Lightly season and sauteé the garlic, onions and mushrooms in hot olive oil until tender, usually 4-5 minutes.
  2. Add spinach and cook down until tender and blend well with onions and mushrooms, just another few minutes.
  3. Lightly season salmon and place on top of spinach mixture.
  4. Add white wine, cover and steam on medium high heat for 4-5 minutes. The salmon will be firm and a small amount of milky liquid coming from the salmon is an indication it is done.
  5. Serve and enjoy this healthy and favorable dish. This dish works well with Halibut and Bass.

BBQ Grilled Vegetable Salad

  • 2 Summer Squash
  • 2 Italian Zucchini
  • 1/2 Red Onion
  • 1 large Eggplant
  • 1 each: Red, Yellow, Green Bell Peppers
  • Feta Cheese

Directions:

Slice vegetables and grill. After grilling, then dice vegetables into 1/2 inch cubes. Mix together in a bowl, and spoon to plate. Add Feta cheese.
